Chocolate Cornstarch Pudding

Several years ago I really wanted to serve dessert to guests but didn’t have much in the way of ingredients and didn’t want to go to the store. I got onto allrecipes.com, my favourite recipe site, and found a great recipe called Chocolate Cornstarch Pudding. I made it again over the weekend and it’s still a hit! I thought I’d share it with you.

Chocolate Cornstarch Pudding

1/2 cup white sugar

3 tbsp cocoa

1/4 cup cornstarch

1/8 tsp salt

2 3/4 cup milk

2 tbsp margerine or butter

1 tsp vanilla

In a saucepan stir together sugar, cocoa, cornstarch and salt. Place over medium heat and stir in milk. Bring to a boil and cook, stirring constantly, until mixture thickens enough to coat the back of a metal spoon. Remove from heat and strin in the margerine and vanilla. let cool briefly and serve warm or chill in fridge until serving.

I use reconstituted powdered milk in order to cut the cost, so this is a very low cost dessert and everyone loves it!

    It also makes THE BEST chocolate pie. AND if you take and mix whipped cream and cream cheese (can you get those??) and make that a bottom layer over a graham cracker crust, followed by this? Your husband will rise up and call you blessed, I can assure you of that!!! :D

    Ooohh… I like the sound of that. Yes, we can get cream cheese and I can make my own whipped cream (no Cool Whip, although I’ve seen a recipe for making my own). The graham cracker crust will need to be improvised, but it’s doable. But that sounds delicious!!

    Is Cool Whip, cream in a can???? Dairy whip?

    Hi Wilm - the closest thing I’ve found to graham crackers are digestive biscuits (not the chocolate coated ones!). They have a little bit different texture, but if you’re only using them as crumbs it works fine. To make a crust you have to add melted butter and… anything else? I can’t remember. It would be easy to find out. In the States you can actually buy pre-made graham cracker crusts.
    Cool Whip is basically frozen whipped cream that comes in a tub. It doesn’t freeze solid, but very stiff, so you can fold it into things like pudding. It’s super common in American desserts and can be bought for $1 a tub. Often when something calls for Cool Whip I’ll just use regular cream that I’ve whipped myself, depends on what you’re using it for. If I’m making a trifle, I’ll just used whipped cream. But for something like what Dawn suggested, I’m not sure if that would work. although you’re going to put it straight back in the fridge, so maybe it would work? What do you think?

    So that’s what graham crackers are!
    The whipped cream sounds like it would work ok.

    And I made the chocolate cornstarch pud this afternoon - couldn’t resist it as it sounded pretty simple! Looking forward to trying it out tonight :-)

    Good thinking, making it in advance. It’s much better cold I think. And sometimes if I don’t cook it long enough it doesn’t set very well. The other night I got the leftovers out and ate the rest myself. YUM! Also make great ice blocks.
